Ingredients (1 loaf or bundt cake)

  • 2 1/2 cups all-purpose flour

  • 4 large eggs
  • 1/2 cup 7-Up (or other lemon-lime soda)

Instructions

1. Preheat oven

2. Mix dry ingredients

  • In a bowl, whisk together flour, baking powder, and salt. Set aside.

3. Cream butter and sugar

  • Beat butter + sugar until light and fluffy (about 3–4 minutes).
  • Add eggs one at a time, beating well after each addition.
  • Mix in vanilla (and lemon zest, if using).

4. Add flour and 7-Up

  • Gradually mix in dry ingredients, alternating with 7-Up, starting and ending with flour.
  • Mix just until combined β€” do not overmix.

5. Bake

  • Pour batter into prepared pan.
  • Bake 60–70 minutes (loaf) or 50–60 minutes (bundt), until a toothpick inserted comes out clean.

6. Cool

  • Let cake cool 10–15 minutes in pan, then invert onto a wire rack to cool completely.
