Here’s a creamy, indulgent 5-cheese mac and cheese that balances richness, stretch, sharpness, and flavor. You can bake it or keep it stovetop-style—your choice.


5-Cheese Mac and Cheese

Ingredients (4–6 servings)

Pasta

  • 1 lb (450 g) elbow macaroni (or shells, cavatappi)

Cheese Blend (about 4–5 cups total)

Mix-and-match, but this combo is perfect:

  • Sharp Cheddar – 1½ cups (flavor base)
  • Gruyère or Swiss – 1 cup (nutty, melts well)
  • Mozzarella – 1 cup (stretchy creaminess)
  • Parmesan – ½ cup (salty, sharp)
  • Cream cheese – 4 oz (rich, silky)

(You can substitute Fontina, Monterey Jack, Gouda, Havarti, or Provolone.)

Sauce

  • 4 tbsp butter
  • 4 tbsp flour
  • 3 cups milk (whole milk or 2% works)
  • 1 cup heavy cream (or use all milk)
  • 1 tsp salt (adjust later)
  • ½ tsp black pepper
  • ½ tsp paprika
  • ½ tsp mustard powder (optional but excellent)
  • Dash of hot sauce (optional, for depth—not heat)

Optional Topping for Baked Version

  • 1 cup panko breadcrumbs
  • 2 tbsp melted butter
  • ¼ cup Parmesan

Instructions

1. Cook the pasta

Boil the macaroni until just al dente.
Drain and set aside.


2. Make the 5-cheese sauce

  1. In a large pot, melt butter over medium heat.
  2. Stir in flour and cook 1 minute to form a roux.
  3. Slowly whisk in milk + cream until smooth.
  4. Cook 3–5 minutes until thick enough to coat a spoon.
  5. Lower heat and add:
    • Cheddar
    • Gruyère
    • Mozzarella
    • Parmesan
    • Cream cheese

Stir until completely melted into a silky sauce.
Season with salt, pepper, paprika, mustard, and hot sauce.


3. Combine

Add the drained pasta to the sauce and fold gently to coat.


Option A: Stovetop (super creamy)

Serve immediately—this version stays ultra-smooth and rich.


Option B: Baked (golden and bubbly)

  1. Preheat oven to 375°F (190°C).
  2. Pour mac and cheese into a baking dish.
  3. Mix panko + melted butter + extra Parmesan and sprinkle on top.
  4. Bake 20–25 minutes, until bubbly and golden.

Tips

  • For extra creaminess, add 1 extra tablespoon butter when mixing pasta + sauce.
  • For smoky depth, replace some paprika with smoked paprika.
  • For a spicy twist, add pepper jack as one of your cheeses.
  • For crunchy topping, broil the last 2 minutes.
